Hen or Tom turkey usually depends on how many people your inviting to dinner. Hen turkey's usually range from as low as 10 pounds to as high as 18 pounds. Tom turkeys usually range from 18 to 30 pounds. As for the cooking differences, there are little if any. The big difference is the bone structure. There will be more meat on an 18 pound hen than on an 18 pound tom turkey. How Big? A good rule to go by (if you like moderate left over's) is approximately 2 pounds of fresh turkey weight per adult. Children being less. What Brand? We suggest Grade A not injected or pumped turkey. Buy fresh, not previously frozen. Beware of the .29, .39, .49, and .59 cent turkeys, they may be cheap, but paying .59 cents a pound for injected water, phosphates or salt add up on dollars and down on taste, tenderness and moistness. 			Butler Gourmet Meats - The Prime Difference The difference between Butler Gourmet Meat Co. Prime Rib roasts and other so called oven ready prime rib roasts. Standard grocery store oven ready Prime Rib roasts usually have large amounts of fat and ribs still attached making it difficult to prepare, cut and serve. When Butler Meat Co. say's "Oven Ready" we mean oven ready. Just season and cook, that's all. Butler Gourmet Meat Co. goes the extra effort of taking excess gristle and fat off. We remove top lifter fat, and trim, along with the ribs. We then tie back the thin basting fat and back ribs to the roast, after trimming it. After cooking, it's one swift movement of the knife that cuts all the strings. The fat covering and ribs then can be removed to carve uniform pieces of prime rib sure to impress your family and friends. Our roasts may be a little more expensive than the grocery stores, but paying for excessive fat, gristle, and bone, add up to more work, which equals more money per pound, and a lot more hassles. It is then slowly smoked over hickory chips (a process that takes over 14 hours), then slow cooked to perfection for more tender and moister Hams. Our bone-in and boneless Hams are available in various sizes. Ready to eat as they are fully cooked. Cooking is almost fail safe.
